Ingredients

  • 2 pounds Russet or Yukon Gold potatoes
  • Pure Ocean® Premium Sea Salt—Fine grain, for salting the boiling water
  • 1 cup warm milk
  • 4 tablespoons room-temperature unsalted butter, cut in pieces
  • ½ teaspoon fresh cracked black pepper
  • 1 teaspoon Wild Porcini Salt

Cooking Directions

  1. Wash, peel, and cut the potatoes into 1-inch pieces.
  2. Place potatoes in a large pot of cold water salted with Pure Ocean® Premium Sea Salt and bring to a rolling boil over high heat. Note: Adding potatoes to already hot water increases the chances of uneven cooking, so be sure to use cold water.
  3. Reduce the heat to medium and simmer 12-15 minutes, until potatoes are fork tender.
  4. Drain potatoes and allow to thoroughly air dry.
  5. For best results (read: less lumpy), mash potatoes in small batches with a ricer or food mill, adding salt to taste, butter and milk a little at a time until completely incorporated, being careful not to over-work.
  6. Top with Wild Porcini Salt and black pepper to taste. Serve hot.
