Cooking Directions
- Wash, peel, and cut the potatoes into 1-inch pieces.
- Place potatoes in a large pot of cold water salted with Pure Ocean® Premium Sea Salt and bring to a rolling boil over high heat. Note: Adding potatoes to already hot water increases the chances of uneven cooking, so be sure to use cold water.
- Reduce the heat to medium and simmer 12-15 minutes, until potatoes are fork tender.
- Drain potatoes and allow to thoroughly air dry.
- For best results (read: less lumpy), mash potatoes in small batches with a ricer or food mill, adding salt to taste, butter and milk a little at a time until completely incorporated, being careful not to over-work.
- Top with Wild Porcini Salt and black pepper to taste. Serve hot.
